Vegetable Quinoa Pilaf 
I found this recipe here and changed it up just a tad. It was so good! But I do warn you that it is a lot of food and I was actually able to use the leftovers to cook with lean ground turkey for a whole other meal. 
 
Ingredients used:
1 tbsp coconut oil1 medium onion, diced3 carrots, peeled and shredded1 cup mushrooms, washed and diced1 large head of caulifower, trimmed, washed and shredded2 cups of green kale, ribs removed, washed and shredded1 cup of quinoa3 cups low sodium veggie broth2 tsp trader joes jalepeno pepper hot sauce1 tsp black pepper1 tsp cumin1 tsp sea salt
Directions:
Using a food processor, shred onion, carrots, cauliflower, mushrooms and kaleSaute all shredded veggies in coconut oil Add quinoa, veggie broth and spicesCover and bring to a boilReduce heat to med-low, and simmer for 12-15 minutes, until liquid is absorbed
